Veggie Frittata

This frittata is delicious hot or cot. A super quick and easy dinner idea or perfect for kiddies lunchboxes. You can adapt the recipe to add any leftover veggies you have,
Prep Time: 10 mins
Cook Time: 25 - 30mins
Serves 4 Adults
INGREDIENTS 1./2 red pepper, finely diced
80g sweetcorn - approx 1/2 small tin
large handful baby spinach, finely chopped
300g cooked baby potatoes, quartered
100g feta cheese, crumbled
8 large eggs, whisked
cracked black pepper
YOU'LL NEED
Deep ovenproof non stick frying pan
1. Preheat oven to 170C fan.
2. Place all the ingredients in a large bowl, season with black pepper and stir well to combine.
3. Pour the mixture into a deep ovenproof non stick frying pan.
4. Place in the oven for 25-30 minutes until the frittata is set in the middle.
5. Serve hot or cold.
