Sweet Potato & Ginger Soup

A little spicy, a little sweet, totally filling!
INGREDIENTS: 2 tbsp olive oil 1 tsp curry powder 2 onions, chopped 3 garlic cloves,crushed Thumb size piece of ginger, peeled and finely grated 1 eating apple, peeled, cored and chopped 800g sweet potatoes, peeled & chopped into rough chunks 1.2 litre low salt chicken or vegetable stock Juice of 1 lime
1. Heat the olive oil in a large pot over a medium heat. Add the onion, garlic, ginger, apple and curry powder and gently cook for 5 minutes. 2. Add the sweet potatoes and stock to the pot. Cover and simmer for 20 minutes. Blend until smooth. 3. Stir in the lime juice and serve.
