Beef & Root Veg Stew

Serves 6 Adults

Prep: 10 mins

Cook: 50 mins

 

INGREDIENTS

2 tbsp olive oil

1 garlic clove, crushed

1 onion, finely diced

2 carrots, peeled and roughly cut into 2cm cubes 

1 stick celery, finely chopped

500g stewing beef, roughly cut into 2cm cubes

2 tbsp dried oregano

1 tbsp flour

350g turnip, peeled and roughly cut into 2cm cubes

300g sweet potato, peeled and roughly cut into 2cm cubes

500ml beef stock

 

1. Heat the olive oil in a large heavy based saucepan over a medium heat. Add the garlic, onion, carrot and celery and cook for a few minutes until the vegetables have begun to soften.

2.  Stir in the beef and oregano, turn up the heat to high and brown the meat until golden on all sides.

3. Add in the flour, stirring well to coat and continue to cook for 2 minutes.

4. Add in the turnip, sweet potato and stock. Bring to the boil, then place the lid on and reduce to simmer on a low heat for 4o mins until the beef is tender. 

Depending on the age of your child, blitz the stew in a blender to the desired consistency.

This dish is lovely served just on its own or with brown rice or crusty bread for dipping.
