Slow Cooker Beef Goulash

DESCRIPTION

A rich, comforting Beef Goulash stew with fall apart beef. A perfect recipe for getting iron into your baby’s diet. A delicious, simple to prepare meal. 


INGREDIENTS

1 onion, diced

1.2 kg stewing beef, cut into chunks

3 tbsp plain flour

2 tbsp paprika

2 tsp caraway seeds

3 red peppers, sliced or diced

1 tbsp tomato puree

200 ml low salt beef stock

150 ml sour cream, plus a little extra for serving

TO SERVE:

Small bunch of parsley, roughly chopped

Mashed potato or rice.


METHOD

  1. Turn the slow cooker on low.

  2. Heat 2 tbsp oil in a deep frying pan over a medium to high heat. In a large bowl, toss the beef in flour and add to the hot frying pan and brown on all sides.

  3. Place the beef in the slow cooker with the onions, paprika, caraway seeds, peppers, tomato puree and stock. Season with black pepper and then cook on low for 8 hours or high for 4 hours.

  4. Just before serving stir in the sour cream and parsley.

  5. Serve with some mashed potato or rice.


NOTES:

  • At step 3 you could add in some chopped carrots or mushrooms for some added vegetables to this dish too or serve with some green beans or salad.
