Date & Oat Sugar Free Granola Bars

Easy date and oat sugar free granola / flapjack bars suitable for toddlers and kids. A great lunchbox idea or snack for busy family days.

DESCRIPTION

These granola bars are so delicious and easy to make. A great snack for little ones as there is no added sugar or sweeteners. A very handy lunchbox filler as they are nut free.


INGREDIENTS

200g dates, roughly chopped

150g unsalted butter, cubed

1 pink lady apple, peeled & roughly chopped

200g regular or gluten free porridge oats

50g desiccated coconut

40g mixed seeds (pumpkin, sunflower, flaxseed, sesame)



METHOD

1. Preheat oven to 190C fan. Line a deep ovenproof dish/tin approx. 10inch x 7inch with parchment paper.

2. Place the dates, butter and apple in a saucepan and cook over a medium heat for 5-10 mins until softened and the butter has all melted.

3. Place all the ingredients into a food processor, including the date mixture, and pulse until well combined.

4. Tip the mixture into the lined dish. Using a rubber spatula, press the mixture down really well as this will help the granola bars hold together.

5. Place in a preheated oven and bake for 20 minutes until starting to turn brown.

6. Remove from the oven and cut into slices gently in the dish, using a sharp knife being careful not to break up. Leave to cool completely before removing.



NOTES:

  • Store in an airtight container for a few days to keep fresh.
