Easy One Pan Lemon Chicken Gnocchi

Simple one pan lemon chicken gnocchi recipe with peas and parmesan.

DESCRIPTION

This easy one pan lemon chicken gnocchi recipe has tender chicken pieces, peas and soft gnocchi nestled in a lemon and parmesan cream sauce.


INGREDIENTS

2 tbsp olive Oil

Ground black pepper

4 chicken breasts, cut into strips

1 onion, finely diced

3 garlic cloves, crushed

250ml cream

400ml low salt stock

A good handful of basil leaves, roughly torn

1 spring of rosemary, finely chopped

Zest of 1 lemon

2 tbsp lemon juice

1 tsp cornflour

400g store bought gnocchi

40g grated Parmesan

100g peas


METHOD

1. Heat 1 tbsp of olive oil in a high sided pan over a medium heat. Season the chicken with black pepper and cook, turning occasionally, about 4-5 minutes each side until cooked through. Transfer to a plate.

2. Heat another 1 tbsp olive oil over a medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 more minute.

3. Add the stock, cream, basil, rosemary, lemon zest, and juice and bring to a simmer. Meanwhile blend 1 tsp of cornflour with 1 tbsp of water in a little bowl to make a smooth paste. Add the paste to the cream sauce and allow to thicken slightly.

4. Add in the gnocchi, give a good stir and ensure the gnocchi is submerged in the liquid. Let it bubble gently, uncovered for 5-7 minutes, stirring occasionally until the gnocchi is cooked.

5. Finally add in the Parmesan, peas and chicken back to the pan and cook for a final 2 minutes and serve.
