Peanut & Oat Energy Balls

DESCRIPTION

These are so delicious. A great snack for busy families and also fun to make with the kids. My gang were fighting over who wanted the biggest one and who wanted to feature in the picture!!


This recipe is completely sugar free so it’s suitable for all, including babies under 1. If you’d like to make them a little sweeter for adults or older kids , add a little honey or date syrup.


INGREDIENTS

1 1/2 cups porridge oats

1/2 cup desiccated coconut

1/4 cup milled flax seed

1/2 cup smooth peanut butter (no added sugar or salt)

1/4 cup coconut oil, melted

40g raisins

85g pitted dates

1 tsp vanilla essence


METHOD

  1. First soak the pitted dates in a bowl of boiling water. Leave for a few minutes until softened.

  2. Place the dates in a blender with all the other ingredients. Whizz until smooth.

  3. Roll into 18 even sized balls.

  4. Can be stored in an airtight container in the fridge for up to 1 week,. (That’s if they all don’t get eaten straight away!)


NOTES:

  • Freeze in an airtight container for up to 3 months.
