Slow Cooker Chilli Con Carne

DESCRIPTION

This Chilli con Carne recipe is one of my all time favourite comfort food.

I softened the onions and browned the meat first as I think it adds flavour but if you don’t have time, just bung it all in the slow cooker and away you go- it’ll still taste yum later! Batch cooking this recipe is a great way to save time and have a stash in your freezer. Double this recipe just about fits in a 3.5 litre slow cooker.


INGREDIENTS

1 tbsp olive oil

1 medium sized onion, finely diced

500g beef mince

3 garlic cloves, crushed

1 tsp cumin

1 tsp paprika

1/4 tsp cayenne chilli powder

1 red pepper, roughly chopped

1 tin chopped tomatoes

200g passata

1 tbsp dried oregano

1 tin red kidney beans, drained and rinsed


METHOD

1. Heat 1 tbsp oil in large pot over a medium heat. Add the onion and cook for a few minutes until beginning to soften.

2. Turn up the heat until quite hot and add the mince. Once browned add in the spices and cook for 1 minute.

3. Tip all of this along with all of the remaining ingredients into your slow cooker. Give a good stir and cook on a low to medium heat for a few hours* I cooked mine on low for 8 hours and it was really yummy but you could equally cook for 4 hours on high or 10 hours on low! Play around with your own slow cooker - you aren’t going to ruin the chilli.


NOTES:

- I doubled the above recipe & it just about fit in my 3.5L slow cooker!
