DESCRIPTION

This lentil Bolognese recipe is a super easy and nutritious dinner. Full of veggies. A great batch cooking recipe and perfect for freezing.


INGREDIENTS

1 onion, finely diced

4 garlic cloves, crushed

1 carrot, grated

1 courgette, grated

1/2 tsp chilli powder

Handful mushrooms, finely chopped

1.5 cups red split lentils, rinsed

300 ml low salt veg stock

500 ml passata

1 tbsp oregano

2 tbsp balsamic vinegar


METHOD

1. Fire everything in the slow cooker, give it a stir and cook on low for 5 hours ;)
