Super Quick Fish Curry

DESCRIPTION

A super simple, speedy and tasty fish curry recipe. A perfect midweek dinner for busy families.


INGREDIENTS

1 tbsp olive oil

2 onions, finely sliced

3 garlic cloves, crushed

2 inch piece ginger, peeled & finely chopped

1 tsp mild chilli powder

1 tsp turmeric

1 tin chopped tomatoes

1 tin coconut milk

600g cod or hake, bones and skin removed and cut into big chunks

handful green beans, roughly cut into 2 inch pieces.

1 tbsp lime juice

To serve:

Freshly chopped coriander

Basmati rice


METHOD

1. Heat 1 tbsp olive oil in a large deep pan and gently fry the onion, ginger and garlic for about 5 minutes until soft. Stir in the spices and fry for another minute.

2. Pour in the coconut milk and chopped tomatoes and bring to a simmer. Add in the fish and gently cook for 5 mins before adding in the chopped green beans. Simmer for a further 10 mins.

3. Serve with some basmati rice and freshly chopped coriander.
